For your first session use an egg timer and set it to 8 minutes after all the skewers have been inserted, within seconds you will smell the wonderful tandoori aroma and look on in amazement on how quickly the food starts to cook. You don’t have to but you can turn the skewer half way through the session, it will give you something to do
Your session has ended-Time - 8 min.
Using the stainless steel tongs, clamp them round the skewer and rub them up and down to remove the crust that has formed just below the meat, then slide of slowly, just resting for a couple of seconds at the tip, before pushing it of, this gives the meat a final blast of heat into the centre of the meat as it comes of the skewer.
